Want some fancy Greek potatoes with your fish or steak for dinner? I made Manuela's from Passion 4 Baking lemon baked potatoes for me and the boyfriend last night. Success! Thank you Manuela. You are making me out to be a perfect cook. Here is the recipe (2 people):

Ellikinos Lemoni Patatas

  • 4-8 potatoes.
  • 4 tablespoons of olive oil.
  • 1/2 dl of chicken stock.
  • 1/2 teaspoon of oregano.
  • 1/2 teaspoon of salt
  • A pinch of coarse sea salt.
  • A pinch of paprika powder.
  • 2 cloves of garlic.
  • 1 lemon.
  • Coarse pepper.
  • Parcelli.

First preheat the oven to 200C.

Peel and rinse your potatoes. I put 4-8, because it depends on the size.

Cut the potatoes in two.

In a bowl put the olive oil, the oregano, the salts and the pepper. Grate you garlic and blend it it. Add the juice of one lemon.

A yummy sauce! Smells fresh and delicious.

Blend all the potatoes in the lemon sauce and place them in a small pan. Pour the remaining sauce over the potatoes. The take the lemon peel, grate it and drizzle the lemon zest on top of the potatoes.

Drizzle some paprika powder over the potatoes and put them in the oven. Let them bake for 30 minutes, then turn the potatoes in the pan and put them back in for 20 minutes.

Super tasty and fresh tasting potatoes. Tasted wonderful with a lemon marinaded stake, and would also work well with salmon or other fish dishes.

When they are done sprinkle some dry parcille on top before serving. A good way to impress you significant other or your friends with some out of the ordinary potatoes. My boyfriend was impressed!

xoxo
